I love fresh green peas and when spring serves them up, I find as many ways as possible to include them. Who would have thought to create a pea puree as a bread spread? Topped with smoked salmon the colors scream spring and the flavor whispers nourishing yum. Take this to your next picnic or barbecue and wow ’em.

1 whole grain bread
2 cups fresh peas — or frozen thawed
1/4 cup chives
1/4 cup extra virgin olive oil
1 clove minced garlic — optional
salt and pepper
6 ounces smoked salmon
Slice whole loaf lengthwise.
In a blender, puree fresh raw peas, chives, olive oil, garlic and salt and pepper. Pulse into a paste and spread on bread topped with salmon
